Some of my time in Jordan was spent with the most hospitable people, Laura and Ray from DiscoverJordan. Besides taking me around to see some of Jordan’s history, Laura and Ray kindly put me up at their own house. As a guest in their home, they made me feel very welcome and one night Laura cooked Oozie, a Jordanian dish. How impressive does this look?

I admit I did not know much about Jordanian food but this dish looked comforting. I knew I’d love it. I’m lucky to share her recipe with all of you.Laura made this dish with love and I hope you’ll make yours with some love too. And invite me over to try it anytime ok?

A traditional dish from Jordan that can feed an army and tastes incredible.

Ingredients

  1. Rice (white or any kind you like)
  2. Ketchup
  3. Olive oil
  4. Salt + Pepper
  5. Turmeric , Saffron, Cardamon, Bay Leaves
  6. Nutmeg, Allspice, + Cinnamon
  7. Ground Lamb + Ground Beef
  8. Chicken (drumsticks, thighs, and breast)
  9. Peas and carrots
  10. Almonds
  11. Yoghurt (plain)

Instructions

  1. Take your rice and make saffron rice. A bit of saffron, cardamon, and bay leaves to taste.
  2. The chicken should be baked in the oven with no cover with a mixture of ketchup, olive oil, and turmeric until done.
  3. Mix and cook the ground lamb and beef with salt & pepper, adding some nutmeg, allspice, and cinnamon.
  4. Boil the peas and carrots separately.
  5. Bake the almonds in the oven or fry them on the stove top with olive oil or ghee.
  6. Make it look nice like the photos and add some yogurt on the side. I was surprised how well it went with the yogurt, a mild balance with all the spices in the dish.

    *gasp!* I’m making this, I’m making this!! I clicked on this post’s link, saw the picture (whereupon my mouth immediately watered), gasped, showed D-Man (whereupon his mouth immediately watered), and now I’m craving this so much I probably won’t think straight until I have all ingredients and can make some oozie!

    This looks amazing but it doesn’t provide any measurements for spices and condiment. Can you please give me measurements?

      It is amazing! Unfortunately, I wasn’t given any measurements. Maybe something will turn up if you do a google search? I had never heard of this dish before I went to Jordan. But maybe you could find something and just wing it!
