"My husband got this recipe from a co-worker who raved about how good it was. We made it with a pound of ground turkey and 2 chicken breasts ground in the food processor. We loved it. A raw Tuscan kale salad that has been shredded and tossed with shallots, Pecorino, olive oil, tsp of lemon juice, salt, and pepper goes great with this dish.Originally from: http://www.dinneralovestory.com/chicken-parm-meatballs/"

 1. Followed the recipe exactly. Flavorful and a big hit with the family. I keep this in my store of recipes to use with our leftover sauce.

 2. One star because canned pizza sauce? Really?

 3. This was good, but was, with some personal inventions, made amazing. My wife & I omitted the cheese, and served these with some delicious Orange Sauce on top of brown rice with broccoli as a side for an incredible & easy to prepare dinner. It was much better than the original recipe with Parmesan & Fennel (yuck!) - we tried that once, gross. Red sauce does NOT go with lemon zest to our palate. Lemon zest mixes so much BETTER with Asian flavors. As does this recipe, when you omit the cheese.

 4. These meatballs were so good. The hint of lemon was a very pleasing taste surprise. FYI, the original recipe from dinneralovestory's blog included 1 Tbsp chopped parsley, so the instructions to mix the first 11 ingredients should only include the ingredients through the lemon zest. I didn't have pizza sauce so I substituted a jar of pasta sauce. I used 99% fat free ground chicken and was concerned the meatballs might be too dry, so I added some of the pasta sauce into the meatball mixture. They turned out wonderfully!

 5. i omit the fennel, just personal preference since fennel is such a strong spice and it reminds me of sausage. plus I hate biting downon whole seed.
we tried this (from another source) and prepared just as directed except that we used fresh made marinara instead of pizza sauce (that is what we had on hand) and we ate over noodles.
I was not overwhelmed but my sister loved them.
I believe these would be better served with the pizza sauce and in a crock pot as an appetizer instead of a meal. just roll the balls smaller for bite size servings.

Tweaks

 1. These are really good, and a lighter choice for a warm spring or summer meal. I love the lemon in the meatballs. I used a jar of marinara instead of pizza sauce to keep it lighter. I made them smaller, so there were 20. And I cooked them in the sauce in the crockpot (high 1 1/2 hrs, then low 3 hours). They were so tender, just the way I like meatballs. Thanks for posting!

I live in Northern Indiana with my husband of 37 years and best friend, Evan. Due to unfortunate circ*mstances and God's grace, we are raising our two beautiful grandchildren from our daughter, Chris, who lost her battle with breast cancer after a hard, four year battle. It is a responsibility that I do not take lightly. God has blessed us with these kids and it is an honor to be able to raise them. That's not to say, it's easy. Organization is the key. We do lots of meal planning and advance preparation.

Evan & I enjoy eating out at fine restaurants and then trying to re-create gourmet meals at home. Unfortunately (?) we are such good cooks that we are usually disappointed when eating out because we know that what we prepare tastes better (and less expensive). Therefore, we usually only order something that we haven't made at home.

We love to cook together and spend many hours cooking for family and friends. Quite honestly, Evan is the better cook in the family. He has a knack for knowing what flavors and spices blend well together and has created many original creations.

I love to find and try out new recipes - which is why I visit Recipezaar often. We've added many of your shared recipes to my public cookbook titled Permanent Edition. I only post recipes that are our favorites and feel that others will enjoy them. I look for ease of preparation AND outstanding flavor. If I post a recipe that's a little more work, it's because the end result deserves the extra effort.

If we had a month off with no work, no responsibilities, and no financial issues; we'd spent time on the ocean in Oregon. My husband grew up in Seattle and spent summers at Cannon Beach (Oregon). I've only been there twice but absolutely love the area.

src=http://i23.photobucket.com/albums/b399/susied214/permanent%20collection/PACfall08partic.jpg border=0 alt=Photobucket>

Why is breaded chicken so good? ›

It's all about that crunch

Done properly, deep-frying creates a satisfying contrast between the crispy-crunchy coating and tender chicken. Beyond that simple textural enjoyment, the crispness actually sends our brain a message that the food itself is in good condition.
