Chicken leg piece fry is a simple chicken legs recipe cooked on the stovetop by marinating the chicken drumsticks in some spices.

About this recipe

Here, I have made it with one of the different methods where chicken is neither deep fried nor baked but is slightly roasted in some oil.

The roasted form of chicken leg piece can be served plain or as a starter recipe or as a side dish to any of the main course recipes.

The chicken legs should always be marinated with aromatic spices for at least an hour to infuse the flavors into the chicken.

If there is little time to cook, reduce the marination time to half an hour and marinate in the refrigerator so that all the masalas get perfectly absorbed into the chicken pieces...

The flavors of the chicken pieces are restaurant made, and I usually do not add too many flavors and always keep every dish very mildly spicy and yet flavorful.

I have seen various versions of making chicken leg piece fry, and here I will be showing the simplest version of making a recipe that can be tried without any difficulty.

All the spices are readily available at home.

Various ways to make poultry legs or full chicken legs

Many recipes on my blog use only legs to make following different methods, and one such recipe is tangdi kabab, a recipe where the legs are marinated and baked in the oven.

The difficulty level of the recipe

One need not require any oven to make this recipe, and my main motto with this blog is to teach my viewers simple cooking techniques which do not require heavy equipment.

Every dish can be simplified and cooked with the essential equipment available at home or in the kitchen.

Step-by-step procedure

Step 1(Marinating the chicken):

  • Take a mixing bowl, and add the chicken legs to the bowl.
  • Take each chicken leg, and make gashes or 2-3 slits to all the chicken drumsticks.
  • Into it, add salt, red chilli powder, turmeric powder, and garam masala powder.
  • Add ginger garlic paste.
  • Also, add beaten yogurt to the chicken.
  • Mix all the ingredients and the masalas well.
  • Add lemon extract to the marinade.
  • Give a good mix.
  • Cover the lid of the bowl.
  • Marinate the chicken for at least half an hour to one hour by refrigerating it.
  • After half an hour to 1 hour, take the marinated chicken out and give it a mix.

Step 2 (Making chicken leg piece fry):

  • Take a non-stick pan, add oil, and heat it.
  • Drop the marinated chicken legs one by one into the pan.
  • Cook the chicken legs for 4-5 minutes on medium flame.
  • Flip the chicken pieces and cook the other side for 4-5 minutes on medium flame.
  • Reduce the flame and cook the chicken legs on low flame.
  • Keep flipping the chicken legs with the help of a tong until both sides are cooked well.
  • Make sure each side is simmered well for 4-5 minutes so that all the sides are evenly cooked.
  • Keep flipping until each side is tenderized well.
  • Take the chicken pieces out.
  • Serve them on a plate.
  • Garnish with onion rings and freshly chopped coriander leaves.
  • Serve hot with lemon wedges.

Can the chicken pieces be baked?

Yes, the chicken pieces can be baked in the oven. The procedure to bake them in the oven is to add a good amount of oil to the chicken marination and ensure it is healthy, such as olive oil, etc...

Preheat the oven to 380 °F or 200 °C; take a baking tray, cover it with aluminum foil, and place a wire rack over it.

This setup helps collect the fat at the bottom and is also a healthy way of cooking.

Place the chicken leg pieces on the baking rack and then place this set up in the oven for about 30 minutes.

After 30 minutes, flip the chicken legs and bake for another 15-20 minutes.

The baking of chicken legs in this procedure gives a very juicy texture to the chicken.

What other variations can be done to the recipe?

This marination is pretty simple, and if you are looking for another variation for chicken legs, check out tangdi kabab, which is also made using drumsticks but baked in the oven.

To modify the marination, additional spices such as chaat masala powder, dried fenugreek, or kasoori methi.

International cooking style can also use parsley leaves in the chicken marination, similar to the cilantro from India.

Indian cooking uses many more dry spices, such as coriander powder, cumin powder, and many more, which can be added to the marinade.

Ingredients

  • 6 chicken legs washed well
  • salt to taste
  • 1 teaspoon red chilli powder
  • ¼ teaspoon turmeric powder
  • 1 teaspoon ginger garlic paste
  • ¼ teaspoon garam masala powder
  • 1 cup beaten curd/yogurt
  • 1 tablespoon lemon extract
  • 2 tablespoon oil

For garnishing:

  • onion rings
  • lemon wedges
  • freshly chopped coriander leaves

Instructions

  • Take a non stick pan, add oil and heat it.

  • Drop the marinated chicken legs one by one into the pan.

  • Cook the chicken legs for 4-5 minutes on medium flame.

  • Flip the chicken pieces and cook the other side too for 4-5 minutes on medium flame.

  • Reduce the flame and cook the chicken legs on low flame.

  • keep flipping the chicken legs with the help of a tong until both sides are cooked well.

  • Make sure each side is simmered well for 4-5 minutes so that all the sides are evenly cooked.

  • When the chicken looks roasted well, switch off the flame.

  • Take the chicken pieces out.

  • Serve them on a plate.

  • Garnish with onion rings and freshly chopped coriander leaves.

  • Serve hot with lemon wedges.

  • Enjoy them as a starter.

Notes

  • Do not roast the chicken on high flame as the chicken legs might get burnt while roasting on high flame.
  • Always maintain medium to low flame and low flame is highly suggested.
  • Always use a non stick base like pan or a flat base non stick vessel to cook the legs which can avoid burning of the chicken legs.
  • Sprinkling some lemon juice all over the chicken legs adds more flavor to the chicken legs while serving them or having them.
